Made using organically reared venison meat from the Knepp Estate. Using the silverside and top rump cuts, we coat the muscles in the dry rub then allow the drying process to start. It take around 6 weeks get to the required texture, then it’s thinly sliced and packed.

This is ready to eat.

Ingredients - Organically reared venison, salt chilli flakes, garlic, sodium nitrite, sodium nitrate.
