Made using organically reared beef from the Knepp Estate. We rub the muscles with our blend of herbs and spices with a little extra chilli to add a delicate warmth, followed by an air drying maturation process for around 6 - 12 weeks until it is ready to slice thinly.

Ingredients - organically reared beef, coarse sea salt, fine sea salt, chilli flakes, garlic powder, coarse ground black pepper, dextrose, sodium nitrite, sodium nitrate.
