Made using organically reared venison from the Knepp Estate. We rub the muscles with our blend of herbs and spices, followed by an air drying maturation process for around 12 weeks until it is ready to slice thinly.

Ingredients - Organically reared venison, red wine (sulphites), garlic, mixed herbs, salt, rosemary, pepper, sodium nitrite, sodium nitrate.
